Suji Dhokla - Quick n Healthy Snacks



Sudden Hunger Pangs..Quick Breakfast....sudden arrival of guests....kids favorite....I can keep adding tags and the list goes on....

This recipe is favorite of all. I have hardly come across people who don't like this. A wholesome meal with carb, protein and fibre, it gives you a healthy option too...

Ingredients:

Suji/Rawa - 1 cup
Yoghurt - 1 cup
Salt - 1 tsp or as per taste
sugar - 1 tsp
lemon juice - 2 tsp
turmeric - 1/2 tsp
Eno fruit salt - 1 sachet or 2 tsp
Grated carrot 1/2 cup
oil for greasing the vessel

For tempering
oil - 1 tbsp (can reduce the oil quantity for the health conscious ones and can use butter or ghee for the other creatures:-)
Mustard seeds - 1 tsp
Curry leaves - 10
Green chilli chopped - 3-4.
2 tbsp vinegar

Method:

Mix all the above ingredients in a bowl except eno fruit salt. Mix well. Make it creamy batter like you would make for idlis. No too thin or too thick...Add eno just before you put it for steaming with
1 tbsp water. Mix well again.

Now grease a flat base saucepan. You can use cake bowls too. Pour the batter only till 3/4 of the vessel. Leave some space for it to rise. Heat water in another pan which is bigger than the earlier and can well accomodate the batter vessel. When the water is boiling, place the batter vessel in the bigger saucepan. Cover the batter vessel first with a lid and secure it well by placing a weight on it. You can even use flat round tiffins. Now cover the bigger saucepan and don't let the steam escape.

I usually use the pressure cooker minus whistle. Now steam it for 15-20 mins.

Don't let the water in bigger saucepan dry else your dhoklas would burn. Now take off the lid and check with a knife in the centre. If it comes out clean then remove it from fire else cook till its done.

Now turn it upside down and remove it on a plate. Cut them into diamond pieces and temper it with above ingredients. Serve it with chutney/sauce of your choice.



 Tips:

1. You can cut the dhoka in between and apply chutney and placeit on one another.
2. Add vinegar in the tempering after removing it from flame else it catches fire
3. Grease the vessel well else the dhokla would not come out clean
