Flavor e Bahara Prawns Curry

Flavored Prawns Curry
I have been missing from the blogging scene for quite a while due to pregnancy. Though I regret not visiting my blog regularly but the feeling of being pregnant and expecting a new life has filled that void:-). my husband has been making every possible attempt to keep me happy and energized. To make sure I get to eat some tasty food along with the nutritious ones ( i call nutritious boring!) he keeps experimenting with his culinary skills


quite often. So this sunday he made a delicious prawn curry to help me overcome the mundane food.

And guess what we (yeah it's never only 'he' it is always 'we') made it in a claypot with a riot of flavors in it and it turned out to be so yummy. Sharing the recipe with you all

Ingredients
Prawns medium sized 8
Onion 1 - chopped
tomato 1 - chopped
Ginger julienned - 1tsp
Green chilly 5-6 slit length wise
Lemon grass stalk - 1" 2 pcs chopped coarsely
Orange Rind - 1 tbsp
Basil Leaves - 5-6 soaked in water
Coconut milk - 1 cup
Oil - 2 tbsp
lemon juice - 2 tsp
salt as per taste
Turmeric - 1 tsp
Dry red Chilly - 2-3 for garnishing
coriander leaves chopped - 1 tsp

Method:
Marinate the prawn in salt and turmeric for 15 mins. Set aside.
If you are using a claypot then soak it in water for 15 mins before cooking. Now put it on direct heat and once it is hot add oil. To the heated oil add add prawns (i insert a toothpick to help it stay straight, else it bends) and fry them for .more than 2 mins turning sides. Take them out and absorb excess oil in kitchen tissue paper.

Now in the same oil add the onions and fry them for 4-5 mins. To that add ginger, tomatoes and lemon grass stalks. Fry till tomatoes are soft.


 Now add salt and coconut milk and boil for 2-3mins. To this add slit green chillies, orange rind and roughly hand torn basil leaves and boil for 3-4 mins. Now squeeze in lemon juice, dry red chilli  and boil it for another minute. Remove from fire, add coriander leaves and serve hot with steam rice...........yummmm.


Tips:
1.You can alter flavors if you dislike certain ingredient.
2. you can alternatively cook in normal wok
